I don't have any experience with thin POS systems but some with PC based
POS...

In the manual of the barcode scanner there is configuration barcodes that
can be used to make different settings such as enable/disable barcode
types, change keyboard layout when used in keyboard mode, and if the
scanner supports serial over USB then you should be able to make that
setting in the same way.
Nowdays manuals comes in PDF more and more so you might need to print the
pages you need to do this configuration

At first this sounds like a serial port device as well, looking at some
pages the printer supports "everything"
however it looks to be different types of boards for the connections?

Can you tell me/us more about what the board or connections the printer has?

Sorry I can't help more with what you are looking for but hopefully the
barcode scanner configuration is a start.
