This probably has to do with the different types of partition scheme that each requires--Apple Partition Map or GUID Partition Table. Take a look at, for example: http://discussions.apple.com/thread.jspa?messageID=6212712& The option to choose one or the other comes up when partitioning a disk in Disk Utility. Click Advanced options, as I recall.
