You can, in the case of youtube, click on the pause until the whole clip is loaded (you can see the progress bar) and then trying to play it. This is a fix for bandwidth issues. You can use something like Cosmopod (for safari), and there are a number of plug-ins for Firefox to do this, (someone with more experience with FF can chime in with a recommendation) and then play the clips locally.
