I have found that RipIt handles well ripping "70 GB" DVDs as fileset.
MDRP sometimes cannot do it, even as image, and MTR just crashes.

As far as compressing DVDs, I swear by DVD2one. It's the best software
I have found. You get great quality DVDs every time.
