There are no visibly loose connections, and it runs fine for varying
periods of time between these episodes, but once it stops recognizing
the built in kb and trackpad it does not recognize them again without
a restart.
What is likely to cause this behavior?

Might be worth disconnecting the built-ins and reseating their cables.

Tried that already, with no change. I also find it suspicious that they both always quit working simultaneously.

I'm thinking maybe somehow the logic board is failing, but AHT detects no problems.
