Just to follow up, it was a simple upgrade.  After putting the new ZIF in,
setting the jumpers, and zapping the PRAM for good measure, I had the G4
chip running with the cache operating at the default 2:1 ratio, and Altivec
instructions running smoothly.

I'll wait a little to see if I can manage a full 2x jump (266 to 533) in
about a week to see if the 500 speed is stable.
