I don't know of any one apple article that talks about everything Mail. However, there are plenty of articles on the support page about Mail.
When switching to a new email program it's best to "cut the cord" and start using the new one and stop using the old one. There is less confusion that way.
I wish I could just try it, as it sits here on my hard drive, but it would be too confusing getting mail in two programs, and I need stable email for my business.
With a message highlighted in the inbox in Mail go to the File menu and you will see Save As... There you can save as text or rich text.
Any comments on getting text out of email more easily? (All I know how to do is cut and paste, and that's cumbersome for long threads - actually it's just cumbersome, period.)
