The iPod doesn't exactly "sleep." It will turn itself off after a minute or two of inactivity. If I'm in the middle of a song I want to hear later, I press pause. After a min the iPod shuts off. Later, when I'm ready to listen again, I press Play once to turn iPod on then again to start the song where I left off.

To turn it off on command, press and hold the play/pause button. Doing this, however, will not leave you where you left off.
