The apple microphones come with a longer mono plug that connects it through that same input jack to a mic preamplifier. However, as far as I know, mic input is mono only. If you want to use stereo microphones, you need an external mic preamplifier and input through the standard length stereo jack.
AT least one of the a/v cards also has RCA inputs and outputs, which use standard RCA plugs. Whether you use the 1/8 or RCA (if you have them) makes no difference, but you must select the one you want in the sound control panel (see below.) You can get cables for the audio easily, unless you want to access the mic preamp. No need to make things up special. To use the audio in to digitize sound you usually need an application. There are a bunch of public domaine audio editors. Can't remember the names since I'm not at my machine. I use mostly Bias Peak, which is a commercial app, but you can download a demo. Sound input and output is controlled from the sound control panel in 9.x. I think it's the same in 8.6. You sometimes have to access that control panel even if you are using an audio application to make sure it is looking at the right inputs. If you are planning to use your card for video, I can't be of much help. I can say that if you have the DVD A/V card, video in will not work unless you have a rev 3 motherboard and no video pci board is present. Neither of the wings video cards can do video that is up to the modern standards, which is easy to get into with a firewire card and a digital camcorder. Hope this gets you started.
