I'd like to add:

Being able to just select a file and then do command-s to stuff it.

Or just adding .sit to the file name, then hit return and it gets stuffed and deletes the original.

Or unpack and delte original by removing .sit from the filename and hit return.

And you can .zip files for your PC friends - yes, ZipIt does stuffed files, I know, and you can get Stuffit Expander for PC too, I also know, but my PC friends doesn't and gets totally confused if I email them a .sit.

And then there's Secure Delete and...
