I use a Radeon 7000, Mac version (not a flashed pc version) which supports two
monitors very nicely, no problems. I could even hang a third monitor on the
motherboard video if I needed to. (The flashed pc version won't do two monitors
though you could still use the motherboard for the second.) 

I have a 133ATA card running three drives with a fourth on the motherboard
(can't figure the wiring to hang that last drive on the 133. )  Also no problem. 
I have over 350 gigs internally in my Beige MT.

I have a G4 466 ziff that runs Panther just fine on my system.

I have a Firewire/USB 2 card that works fine too.  USB 1 works fine but I
haven't tried USB 2.  The card came with drivers for X and Panther has  usb 2
built in.  Just haven't tried it.  My outboard drive has firewire/usb 2 so I
should try it, but haven't had the need.

My only problem was occasionally intermittant Firewire when uploading video.  I
suspected the card was overheating I added a couple of extra fans which are easy
to do on the Beige MT since there is a place for them designed into the internal
handle that opens the hinged case.  One of these fands blow directly on the pci
cards.  That seemed to clear it up.

I go for G4 since a lot of video apps seem to require it.  G4 upgrades are cheap
enough these days.

As far as giving QT more ram, I wouldn't know.  It's a non issue in OS X which
you should upgrade to for most video work.  You don't need to assign ram in X.  
I still use os 9 for graphics since I can't seem to figure out the printing
issues while printing is a breeze in 9.

Many of your questions remind me of those I had when I first started upgrading
my ebay Beige monster.  This list was a great help in getting it all working as
well as it does.
