Note: I'm going under the assumption that the 733 is a Sawtooth-like (graphite) model and not the Quicksilver model.
As an owner of a Sawtooth, I'd also go with the 733. Under OSX, with the overhead from the dual processors, you get about the same speed. Besides, you could eventually move the 733 to an even faster dual CPU in the future. To make matters for the 500 worse, the 733 will have a 33MHz faster system board, faster RAM, and an 4x AGP video card. Those will give the 733 quite an edge. Especially if you install a fairly decent video card. (2x AGP vs 4x AGP slot).
