The 8500 HD finally showed up on the iMac. Does it usually take hours?

The first time you start up File Sharing, it can take quite some time while it builds the volume's index (file protections etc). When it's done, the File Sharing control panel will tell you File Sharing is on (instead of "starting").

There's no need to actually apply ownership and a set of protections to a whole hard drive... Just connect to that computer as the owner - they you have access to all the drives etc.

Now, should I copy the OS 9.1 System Folder? I expect I will need some of the items therein if I'm using some old applications in Classic, won't I.

You cannot fully copy the System Folder a Mac is booted upon with AppleTalk. It respects open/locked/busy file attributes.
