Panther does come with a driver for my Epson Stylus Photo 785epx, in the "more

driver.
Make sure there isn't an obscure checkbox for 'advanced options' somewhere. 10.3 and 10.2 aren't that different when it comes to printing, a 10.2 driver should work just fine with a 10.3 system.
In Panther (10.3.6) no such item appears, not even with the Gimp driver for this
printer, even with the latest Gimp-Print beta version (5) installed. So it is
impossible to access the controls for this printer.
Gimp print drivers almost invariably have fewer, not more options for printing.
So I wonder if something is wrong with my os installation or what?
No, if something was wrong with your OS install you wouldn't be able to print at all.
Try downloading the drivers from Epson and using those. Even though it looks no different, there may be differences.
