I have an extra 30GB drive. Plan A was to put it in the empty bay as a slave for quick backups and as a bootable drive in case the other internal drive goes, but I couldn't figure out how to get the internal chassis up to get underneath!

This is illutrated teardown of a 7500. This is identical, as far as the upper drive bays go, to your Beige G3 desktop.
You have one more drive bay, underneath the flip-up chassis, where your boot drive is, but there's space for two more drives on the left hand side of the chassis, next to the floppy and the CD-rom. If you have a Zip drive it takes up one of the bays.
