I do not remember the license agreement with iTunes, but under normal copyright practice if you transfer the license and all copies you own with the DVD you should be safe. Just remember, the iTunes license is for ONE copy. If you give them multiple copies of the DVD, you will need multiple licenses of the song.
If you are going to be doing a lot, you may want to look into obtaining some royalty free music, or buying some that allows unlimited redistribution.
For example, if she takes pics of a wedding, purchases the background music on iTMS, and creates a DVD to sell to the newlyweds, will we go to jail?
Probably not.
