A clarification/correction to what I said before. Run the Keychain Access application (in the Utilities folder). If the drawer listing all the keychains is not showing, them be sure to click the "Show Keychains" button at the right side of the toolbar (presuming you haven't reorganized the toolbar.) Select the one titled "login" and then in the Edit menu select, 'Edit settings for keychain "login"', or whatever the name is of the keychain that Mail is using. Uncheck the "Lock after X minutes of inactivity".
