Try this:  Keep your most used apps on the dock:  Safari, Mail, iTunes etc
but open up the finder and drag the Applications Folder down to the dock on
the side of the divider next to the trash can.  Then anytime you need an
application hold down the mouse on this folder icon and up will pop the
entire listing of your Applications folder.

You do realize that you can also control click on anything and the option to
"Move to Trash" comes up?  How long have you been using OS X?

Can't help you there.  OS X is highly customizable!  You just need to spend
a little more time exploring and learning and a little less time kvetching.
