And I check the System Profiler, and NOTHING SHOWS UP in SCSI. Click
the SCSI option, and it tells me "No information found."
Any ideas? Anyone experience something like this?

You need a OS X driver for the scanner and Umax does not supply one for
the Astra. You need to go to http://www.hamrick.com and get Vuescan,
and then all will be well
