What are you going to be using it for? If the apps are Altivec aware, there will be a some improvement depending upon what you are doing. If not, not a whole lot of speed boost.

The big difference is in the monitor. Do you like LCD screens? I am still a crt fan. However, the increase in available screen size from 13.8" viewable on the 600 to 15" on the 700 is important to me and would sway me towards it.

Just as important is the Ram/HD size. A G3 600 with a gig of ram is very usable in X. Whereas, G4 with only 128 meg is pretty useless for running X.
