In my experience (OSX 10.4.11): - most applications will go wherever you last saved a file with them - some will go to your "Document" folder by default - and a few (like Photoshop) will go where the opened file resides. IMHO the last behaviour is the best, but it's also the least common. AFAIK, there's no standard (global, system-centric) behaviour you can set. If this is troubling you, using a third-party tool (like DefaultFolderX) is advisable.
