Absolutely! :)

You can install your Mac OS on that and then you'll have as much space as you 
need.
 From there you can choose to use a VM or partition.

to boot from the external you simply hold down Option at startup and select the 
drive as you normally would with any other bootable disc.

It might actually even be cheaper to get a standard laptop drive and inclosure 
separately and install the drive yourself. This can be very easy to do. If you 
have not done this before than you probably want sighted help the first time, 
but once you learn it it's really easy to do on your own.
