You're correct about the poison, every time you hear that sound you lose 1% health (on easy, at least). As far as ghosts go you're probably best off stopping until you get a really good feel for the game - I've managed to kill one or two moving, but its a major risk. For the statues, you can either just keep wacking it until its dead, or use your bow. They have a lot of hp, so make sure either that you have full health or that you've got arrows.
