Knights are about 5 times more powerful in combat, and have a reduced chance that they will be injured in the fight, due to their armor. Personally I only use soldiers if I'm desperate. Once I'm able to train some Knights, they become my defenders and I bring the remaining soldiers back to do other jobs.
