I like this idea a lot. Especially with how people seem to be abusing the stealth skill to solo big missions. I even saw people standing next to someone they wanted to kill, firing their guns, and running away in order to bury him in a tide of zombies. The type of zombies you propose would cut down on this behavior, and it would encourage people to actually shoot things.
