Everything I know about is a bit pricing.  Have used Pentascanners, Compass,
and I hear that Fluke makes some nice stuff.  You may be able to rent
something instead of buying it.  Continuity is great but EMI can still screw
you up.
If I were you I would just use all cat5e for data and phone, there are nice
ACO kits that will allow for two phone and two data connections using two 8
conductor Cat5e cables.  Also, if you go ahead and connect all of the wires
on the phone connections then the ACO inserts will allow for multi-line
phones without having to go back into the jack and do anything special.  I
think its always best to connect every wire you have as you might end up
using digital phones one day and although the digital phones that I work
with use two wires there are some that require four.  You'll just have to
punch down the lines on the correct C4 or C5 connectors in the wiring
closet.  I'll get the manufacturer's name of the ACO kits that we use.....I
like them because the wall jacks which contain the female end of the RJ45
connection is of the punch down variety...just like a 110 punch block in a
wiring closet, makes for a very secure connection.
I've done business with Southern Electric (Rexall, Cable Connector
Warehouse).  They have just about everything you will need and they are
pretty good about keeping it in stock.  The location that I have been to is
in Baton Rouge on Choctaw Dr.  Its on the corner of Choctaw Dr. and that
street that goes to Cortana Mall.....I think Leo's Roller Rink used to be on
that street.

Great plan btw, if I end up building another house then I will be doing all
the phone, data, and cable wiring myself....all to a central closet designed
specifically for that use.
