I'm planning to use IMAP, so that employees can check mail from multiple machines.
I found the following mini-HOWTO: http://www.linuxdoc.org/HOWTO/mini/Outlook-to-Unix-Mailbox.html which has some good info. Looks like my main difficulty will be migrating the folder structures. We currently have about a dozen employees, so I can do each employee one by one.
