I agree with Ed. This is a bigger job than it may seem
on the surface.

The biggest unknown is the hardware. Is it working?

If so, then the job becomes a little easier, provided
all the hardware is pretty much the same.

I'd recommend spending the majority of the time
getting one machine configured well, and then making a
disk image of the drive and then duplicating that.

Mat, holler on the list if you need help. I may be
able to help over the weekend, but it would be much
smarter to take more time to get it done right.
