You should be able to setup the RAID devices during install... it is pretty straight forward if you know what RAID levels you want. Redhat will support booting off RAID-1 or RAID-5 in software. Just setup/partition the raid devices in disk druid just like any other disks. Also you'll want to write a script to monitor /proc/mdstat and notify you if one of the raid members fails. Of course all this is for software RAID... if your SCSI cards are RAID, then it's a whole different setup (much easier).
Any reason for 7.1? I've had better luck with 7.2 or 7.3. I would go with 7.3 just for ext3. Also Advanced Server shines when you have two boxes connected to shared storage (ie Fibrechannel/SAN), for HA/failover. Or if you are running Oracle and need the extensive kernel enhancements that Redhat did.
