In terms of time, I would guess it takes longer. I have been through a gentoo install, but not a debian install.
In terms of ease of use, I would say it is more difficult during the install, however, there are EXCELLENT step by step instructions on the Gentoo website. If you can follow the instructions, you can install Gentoo. It is worth the trouble because you end up with a screaming system customized the way YOU want it. It is not for the novice though...
