I agree with Shannon. I've done both Debian and Gentoo installs and 
Gentoo definitely takes longer as it downloads and compiles all 
installed software, though you do have options to install precompiled 
software if you wish. If you aren't installing X and GUI apps, it 
actually doesn't take too long.

I strongly recommend Gentoo, as the performance boost and strict control 
of apps installed is worth the extra time that the install requires. 
Even Debian, my other favorite distro, installs a bunch of apps I don't 
use or want (emacs takes up 20MB, vi does what I need).
