You guys are killing me! I am still at work and all the decent places to eat have closed now. I am going to have to go home and cook now!

Didn't even mention Zydeco... Check out Beau Jacques, Keith Frank, Rosie Ledet, etc. etc. I saw Beau Jacques in New Orleans the night he died. He performed till 11:00 and died when he got home that night. That was a real loss to the Louisiana music scene. Cajun & Zydeco are very distinct, but they are both creations of the cultures in Louisiana. Also, check out KBON. You can listen to Cajun music via the internet. My mom lives in Hawaii and she listens to it all the time. Makes her feel like she is back home. http://www.kbon.com/ > Yes. I think food variations in the US are amazing. BLAND! I also work with folks from California that will only eat seafood when they come to Louisiana. They claim it is an assault on the palate to eat seafood anywhere else. > > Another favourite of mine is ribs.
