If you're able to do it, perhaps slackware or debian would fit the bill.

However, I run SuSE, and it is possible to get a small install. What I do is 
choose a minimum install (no X, no servers, no tools, etc.), then once I'm up 
and running, I'll selectively install just the applications I need. If I 
choose apache and a few modules, it will add a few more packages 
automatically that are required for apache to run, but thinks are kept small.
