The "unstable" refers to the libraries which are improved and changed out frequently. Stability is good, but updating can be a bear. Richard demonstrated how Synaptic will make selective upgrades for you, so you can get new programs without changing out 500 MB of libraries. If you like to have new stuff quickly, run apt or dselect. In about five months of running "unstable" on two machines, I've not had any real "stability" problems but have gotten nice new versions of stuff, like KDE 3.3.1.
