I can't say much about Kubuntu, but I ran Xubuntu for a while. The
prefs panel in XFCE is not nearly as full-featured as Gnome's, so
there were some settings I just couldn't change without editing config
files. I ended up switching to 'standard' Ubuntu and taking a
performance hit on my 900MHz laptop.

The Ubuntu team has a very pulled-together Gnome environment; you
should try it out as a LiveCD if nothing else.
