i got back to looking at it, upgraded asterisk to 1.8.1,
then applied this patch from svn:

svn checkout http://svn.asterisk.org/svn/asterisk/branches/1.8 chan_gtalk.c
cp chan_gtalk.c/channels/chan_gtalk.c ~/asterisk/channels/
cd ~/asterisk
make
make install

based off this piaf forum post:

and now my google voice calls work like a champ.
i'm sure my configs are inefficient and could be tweaked, but they
work, so i'll leave it as is.

piaf has so much loaded on top and I wanted just the asterisk phone
calling part, which is
why i started with piaf, to get it working then wanted to move it to a
linux box I already had
running. so far so good. the piaf configs have so many additions, it
was really hard to compare
that to a standalone option.
