I usually use cygwin's shell and ssh. This requires me to set up my TERM environmental variable on the other end. Note that I never use windows as the remote machine in the context of ssh (though I know some other people do -- and note that I have deliberately avoided using the term "server" because ssh includes explicit support for X windows, and "server" would mean something different in that context). On the rare occasions when I connect to a remote windows box and the built in "remote desktop" is not suitable, I usually use VNC.
