As far as I am concerned I think J has everything you look for.
For your needs in teaching you can create more labs to assist you.

If you do not like the signs and if you definitely need APL chars then there
are other APLs who more or less fulfill all your needs.

You can get free copies for teaching and schools of at least Dyalog and some
others as well.

Dyalog APL has now come out with a Unicode version and allows you to step
through your demo scripts similar to J labs.

I like both Dyalog and J and they allow me to do anything I need.
