Well chicken is a different matter when doing the slow cook.... You get the smoke but not the crispness people like. But it's easy to crisp them on the grill for a few minutes after they come out of the smoker. Anyone really interested in slow BBQ-ing should take a look at the forums found at: http://forum.cookshack.com/eve/forums It's a really friendly group of people, a wealth of information,. and they don't care whether you own a CookShack smoker for you to join. I think the most prolific commenter on the forum owns a competing brand.....
