Most everything. Oddly, beef ribs never make it out of the slaughter
house. And pork robs are mainly the fatty parts closer to the spine.

The problem is usually not the meat. It is the spices. Also, I have seen
some recipes that start with some available product and add to that.
This is often the stumbling block. The best recipes would be those fully
from scratch.

Sweden follows the French style of butchery. Which is oddly very
primitive, and not sensitive to the grain of the meat. Quite often the
cuts look like bits of an animal killed in a horrific train wreck.
Pieces cut at surprising angles. Also, meat is usually not aged. So beef
is red as red can be. Finding aged meats is a chore here. All this is
sad as Swedish beef is of the highest quality. Animals here have happy
lives. A favorite brand of pork is called 'happy pig' because the pigs
live outside and get to be, well, pigs. Alas, all this is tradition and
will not be changing any time soon.
