The actual text in the bubble is links to the items, and their color is
specified by
a:link {
color: #FFFFFF;
}
in english_grad_exhibit.html, line 26. So, you want to override that,
too, with this rule
div.exhibit-views-bubbleWithItems a:link {
color: black;
}
