Something about my permissions must be messed up I get this error:

Postfix will create it for you provided your delivery mechanism isn't
maildrop.

virtual_create_maildirsize = yes
virtual_transport = virtual

if virtual_transport = maildrop

you loose the ability to create the maildirs on the fly.
