There are two ways actually.

1. You can style a layer on-the-fly by saving the SLD file somewhere web 
accessible and pass the SLD=http://...mysld.sld parameter as a part of the 
request.

2. You can use the REST interface to alter the SLD that Geoserver uses for a 
style as per http://docs.geoserver.org/2.0.0/user/extensions/rest/index.html

Sounds like what you want is more along the lines of (2).
