Personally I've started using Java 7 to run the IDE and do some GeoServer
runs while developing, but
still haven't tried it out in production. From past experience normally the
java runtime is not production
worthy server side before it reaches the tenth or so bugfix release (but
java 1.5 and 1.6 tended to crash
under load in earlier versions).

We also recommend customers to run 1.6 at the moment, and agree with Justin
we won't see 1.7.x
as the minimum JDK for GeoServer in some time, even if Oracle presses hard
to make 1.6.x unviable
I don't see us adopting it for another year or two (we have kept 1.5.x as
the baseline JDK
way beyond the time it reached EOL).
