For the moment I do not see how to carry on with this. I have corrected the
UUIDs; it is working now. If we experience problem again we will let you know.

1) Is Geoserver supposed to use the embedded data dir in the application
server, too, maybe as fallback for missing configs or is that directory never
used at all?
The embedded data dir should only be used if an external data dir is not
specified, or if the external data dir cannot be found (for instance if it is
on a mounted drive and there is a connection issue)
2) Where are the UUIDs in the embedded data dir coming from? Are they newly
generated everytime a GeoServer is initially installed? Or are they contained
in the GeoServer distribution already, together with the entire default data
dir and just unpacked (so all GeoServers globally have the same UUIDs) ?
The UUIDs in the embeded data dir come from the release data dir
here<https://github.com/geoserver/geoserver/tree/master/data/release/styles>,
which is contained by the GeoServer distribution. So yes, they will be the same
among all GeoServers globally (For example, the UUID for the generic style is
StyleInfoImpl-37b18cc6:14d5d036d48:-8000).
If all data dirs, including the embedded data directory is unavailable for some
reason (e.g. it was manually deleted), then a basic data dir will be generated
on startup.
I'm still not quite sure how this issue could have come about in the first
place.
