We use tomcat+war in production.

Updates and Rollbacks are so much easier this way : you only have to copy
your geoserver folder (and data folder if it's stored on another server for
sharing config in load balancing scenario) and the war file to make a backup
and copy them back to their location, restart Tomcat service and you're
done.

You can also deploy multiple instances on the same machine (using different
port) very easily.

Tomcat + war is also fast and stable.

You're on a better route with this setup than Windows installer.
