Hi Erick, I'm not aware of any common coverage format that would return the result as you'd expect it, but one could be made up, and an output format created on the fly. Output formats are pluggable, meaning one can write a plugin (in Java) without having to change the core of GeoServer. If you are interested I can try to give you some pointers in the code.
