Those are dependency management, not dependencies.
In any case, just run the following:

grep ehcache `find . -name pom.xml`
./modules/plugin/imagemosaic/pom.xml:      <groupId>net.sf.ehcache</groupId>
./modules/plugin/imagemosaic/pom.xml:      <artifactId>ehcache</artifactId>

As you can see the main pom has not been modified, only the plugin, so not
sure
what you're talking about?

It's kind of make or break for us. Alternatives:
- fork the mosaic plugin out of GeoTools
- make it pluggable enough to maintain our own private extensions of it
