Hello Jody, For Java 5 on OSX what I've done previously is downloaded a developer update package for OSX 10.5 from http://connect.apple.com and then used Pacifist to extract the Java 5 components. A page describing the steps is here:
http://hints.macworld.com/article.php?story=20100123192950640 At other times, when too lazy for the above, I've used time machine backups to re-install Java 5 after an apple update for OSX 10.6 has removed it. I'm not sure if this is still going to work with OSX 10.7. Also, Apple's new, more convoluted system locations for Java components (developer updates going into /Library/Java/JavaVirtualMachines/ while system updates, including stripped down JDK go into /System/Library/Java/JavaVirtualMachines/1.6.0.jdk) has already made it all more fiddly.
