That sounds terrific.

I guess for the moment I'll just update the existing
RasterToVectorProcess class to use the new jai-tools Vectorize
operator since (a) that will provide some bug fixes and slightly
better performance and (b) probably no one but me will use it :)

If the process annotations become available in GeoTools I wonder if
they could be used to hack a swathe through the dark, tangled jungle
of existing coverage operators. I find the present arrangement really
hard to work with or understand and, based on previous user list
discussions, I'm not the only one.
